The Spanish ham that costs over $5,000 a leg
In Spain, cured ham is a cultural icon, with one rare variety commanding prices of over $5,000 per leg.
CNBC visited Madrid and met master ham cutter Emilio José García Ortigosa, who specializes in jamón ibérico de bellota, made from free-range Iberian pigs raised on an acorn-rich diet and cured for up to six years.
Emilio demonstrated how expert slicing can unlock up to 30 distinct flavors from a single joint of ham.
